Our sixth cookie recipe comes from Darlene Menard of Omaha. She submitted her husband's grandmother's peanut butter cookie recipe. Menard has been making these cookies since 1956. “I still treasure the letter with the recipe in her handwriting and keep it in my recipe files,” she said.
peanut butter cookies
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
1 teaspoon vanilla
1 cup crunchy peanut butter
2 teaspoon baking soda (the original recipe says “I always scald my soda in real boiling water, just enough to get it dissolved, and pour it in the batter.”)
3 cups of flour, sifted
Cream together the vegetable oil and the two sugars.
Add eggs, vanilla and peanut butter. Mix all together.
Add soda, flour and mix.
Form into small balls the size of a walnut and press down flat with a fork, forming a criss-cross pattern on top of the cookies.
Bake at 325 degres for 10-12 minutes.
Makes seven dozen cookies but they go fast and keep well.
Test kitchen notes: These cookies held together well and came out moist after 10 minutes in the oven. They didn't have enough peanut butter for my taste. Though the recipe says it makes 7 dozen, I got about half that.
