Dining Notes: Learn from master of charcuterie

Charcuterie is an of-the-moment trend in a handful of Omaha restaurants. Now a master of the preservation of meat is coming to the Institute for the Culinary Arts at Metropolitan Community College.

Chef Frederic “Fritz” Sonnenschmidt will be in Omaha on April 8 to prepare lunch and dinner.

Sonnenschmidt, an author and television personality, demonstrates modern cooking applications and trends to consumers, chefs, culinary educators and students around the globe.

He is one of fewer than 70 chefs who have achieved Certified Master Chef designation from the American Culinary Federation. He is the author of “Charcuterie: Sausages, Pates, Accompaniments,” among other books.

From 1 p.m. to 3:30 p.m. on the day of his visit, Sonnenschmidt will speak at a charcuterie reception at the 30th and Fort Streets campus. The reception is $25, and tickets are available at www.brownpapertickets.com/event/355425.

He'll also serve a five-course prix fixe dinner at the Sage Student Bistro. The dinner runs from 6:30 p.m. to 9:30 p.m. Reservations are available through opentable.com.

The dinner is $40 for the meal and $55 for the dinner with a wine and beer pairing.

Sonnenschmidt's Omaha visit is part of the institute's Pegler Series, which brings culinary arts experts to the school to share their expertise with students and the public.

Cupcake contest giving away a trip

Gigi's Cupcakes is giving one family a free summer vacation.

The cupcake shop, which has an Omaha location, is unveiling its summer flavors along with the sweepstakes.

The shop is revealing one new flavor on its website, gigiscupcakesusa.com, every day through Friday. Each flavor is associated with a vacation destination.

Participants can enter to win the contest. The contest continues through April 4. Winners will be announced on the website April 8.

One grand prize winner will be randomly selected and get the chance to choose one of the eight vacation trips.

Eighty-two local winners — one per store — will be randomly selected and will receive 12 free visits to their favorite Gigi's Cupcakes location.

The Omaha location is in Village Pointe, at 16811 Burke St.

Fleming's offers Easter brunch

Fleming's Prime Steakhouse and Wine is having a three-course brunch on Easter Sunday.

It includes classic brunch dishes for $36.95 per person. Each party will receive a $25 dining card valid for a future visit. Kids under 12 years old can eat for $17.95.

Dishes include lobster bisque, a modern Caesar salad or fresh seasonal fruit, prime rib with a trio of sauces, baked brioche French toast with a walnut crisp, and dessert choices that include white chocolate bread pudding.

The brunch will be served from 11:30 a.m. to 3 p.m. Fleming's is at 140 Regency Parkway.

Hippity-hop to Dave and Buster's

Dave and Buster's is offering breakfast with the Easter Bunny on March 30 from 9 a.m. to noon.

The buffet will include scrambled eggs, sausage, bacon, country-fried potatoes, chocolate and vanilla warm doughnut holes, assorted bread, coffee, orange juice, tea and water.

The meal is $12.99 for adults and $10.99 for kids under 10 years old.

The restaurant will also have $5 game cards with unlimited video game play. An Easter egg hunt begins at noon.

Metro team hosts tasty fundraiser

Metro Community College's Culinary Competition Team is having a student showcase and benefit.

Diners can spend an evening with the team members as they prepare a four-course competition menu and appetizers at interactive stations. Guests can taste and critique at the event, which raises money for the team.

The team is a consortium of students and faculty who compete in regional, national and international events sanctioned by the World Association of Chef Societies and the American Culinary Federation. This year's team has already received medals in two competitions and will travel to Little Rock, Ark., in April to compete for the opportunity to advance to the national championship in Las Vegas.

The event takes place March 29 from 6 p.m. to 9 p.m. at the campus near 30th and Fort Streets. Tickets are $75 per person and available at www.brownpapertickets.com/event/336013.

9 wines at 3-course Dante dinner

The latest wine dinner at Dante Ristorante features nine Italian table wines. The family-style dinner will pair three courses with three wines per course.

The food will include local cheese and salami, housemade pasta and ragu and wood-roasted meats and sides.

The dinner, Monday at 7 p.m., is $45 per person. A deposit and reservation are required; space is limited. All of the wines served at the dinner will be available for purchase. Call 402-932-3078 or email info@dantepizzeria.com for a reservation.
